It’s time for another Movement Meal of the Week! This time, we’re bringing you a quick simple Pineapple-Mango Salsa recipe that’s a perfect afternoon snack, and would also pair well with our Delicious Jerk Shrimp. Get some fruit and a knife, and let’s get chopping!

Pineapple-Mango Salsa
YIELDS: 1 Serving
PREP TIME: 15 mins
TOTAL TIME: 15 mins

Recipe Ingredients:

1 Medium Golden Pineapple (very ripe)
3 Mangoes (very ripe)
1 Medium White onion Chopped
1/4 cup Fresh cilantro chopped
1/2 Lime juiced
1/4 tsp Thyme
1/2 tsp salt
1/4 tsp black pepper

Cooking Directions:

  1. Cut pineapple into 1/4 inch cubes

  1. Cut mangoes into 1/4 inch cubes

  1. Combine all ingredients and mix well

  1. Chill overnight and serve cold

This is a super simple and delicious snack to serve with tortilla chips before dinner or Saturday afternoon as you spend time with your loved ones. It can also be paired with our Delicious Jerk Shrimp Recipe to add even more flavor to the dish!
